Mexican Chicken Salad

Serves 2-3

You will need:

  • 2 large chicken breasts, finely sliced
  • 1 small red onion, finely sliced
  • 1 red pepper and 1 yellow pepper, sliced
  • 1 red chilli, finely sliced (optional)

For the marinade

  • 1 heaped dessert spoon of smoked paprika
  • 1 tablespoon of ground coriander
  • A pinch of ground cumin
  • 2 medium garlic cloves, crushed
  • 4 tablespoons of olive oil
  • 1 lime juiced

To serve:

  • 2 teaspoons of sour cream
  • A handful of shredded lettuce
  • 1 tablespoon of grated cheddar cheese

In a small bowl, mix the smoked paprika, ground coriander, a pinch of ground cumin, crushed garlic cloves, olive oil and lime juice together with 4-5 drops of tabasco together with a generous pinch of salt and pepper.

Gently stir the finely sliced chicken breasts, red onion, bell peppers and red chilli, if using, into the marinade.

Heat a griddle-style pan and add the chicken and marinade to cook through. Keep everything moving over a high heat for about 5 mins using tongs to get a nice charred effect. Continue with the pan on a lower heat until certain that the chicken is fully cooked throughout.

Halve and toast a bagel. Place a layer of shredded lettuce on the bagel and top with a generous spoonful of the delicious Mexican chicken & peppers. Finally, sprinkle on some grated cheese and top with sour cream if desired.

If you are pushed for time, you could use ready to eat Cajun chicken and a jar of ready roasted bell peppers in olive oil.

This makes a tasty and satisfying bagel filling but you could also enjoy this as a main meal. Spoon the Mexican chicken into a bowl with salad, avocado and sour cream – and complement with the crisp texture of a toasted bagel!

As they say in Mexico, “Barriga llena, corazón contento!” which translates to “Full stomach, happy heart!”

Brie and Cranberry V

You will need:

  • 3 slices of brie
  • A tablespoon of cranberry sauce (fresh or longer life)

This one is so simple and so delicious. Halve your bagel and toast to your liking. Add a generous layer of cranberry sauce and top with slices of brie. Enjoy as it is or for a little indulgence, grill for about 2 minutes until the cheese is bubbly. A Christmas combination that you can enjoy all year round!

Roast Peppers and Spinach Leaves (vegan) V

You will need:

  • Red, yellow and orange peppers
  • Fresh hummus
  • A handful of spinach
  • A pinch of oregano
  • A few leaves of fresh basil
  • Salt and pepper to taste

Heat your oven to 180º celsius. Wash and carefully cut the peppers into thick slices. Toss in oil and sprinkle with salt, pepper, oregano and basil and pop into the oven for about 20 minutes until soft and slightly charred. You can also roast the peppers by following the same preparation method and use a griddle pan to cook. You can now leave to cool or serve warm.

Halve your bagel and toast it to give a crisp texture. Spread a generous layer of hummus over your bagel. Layer the peppers on top of the hummus. Either add fresh baby spinach leaves on top or boil a pan of water and drop the spinach in for a minute before draining to remove all excess water. Add this to top of the peppers. Squeeze a little lemon juice onto the spinach before serving if desired.

With 4 colours from a rainbow in this delicious filling - we hope this bagel brings a little sunshine into your day!

Halve the bagel and toast until golden in colour. Slice the half avocado and arrange around the toasted bagel base. Squeeze a little lime juice and season with black pepper. Finely slice the tomatoes, add on top of the avocado and sprinkle with salt.

This is another wonderfully simple recipe which is colourful and full of delicious, fresh flavour.

Salami and Sundried Tomato

You will need:

  • 2-3 slices of Italian salami (or any other Italian cured meat)
  • 1 dessert spoon of sundried tomatoes
  • 1 dessert spoon of cream cheese
  • A small handful of toasted pinenuts if desired
  • A few leaves of fresh basil

Slice and toast the bagel in two halves. Add a layer of cream cheese to the bagel halves and sprinkle with the toasted pinenuts. Layer on the Italian salami and sundried tomatoes and top with fresh basil.

Bruschetta for sharing

You will need:

  • 4 bagels, toasted to golden brown
  • ½ small red onion, finely chopped
  • 8 medium, ripe tomatoes, chopped and drained
  • 2-3 garlic cloves, crushed
  • 6-8 leaves of fresh basil, finely chopped
  • 2-3 tablespoons of extra virgin olive oil
  • Salt and black pepper

In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add in the extra virgin olive oil with a little salt and pepper to taste and mix again. Cover with film and chill for at least an hour to allow the flavours to infuse & blend together.

Top the 4 open, toasted bagels with the mix and finish with basil leaves.

Also delicious with some torn mozzarella or slices of prosciutto.

Enjoy this bagel twist on the classic Italian starter, this easy recipe is fresh and full of flavour, perfect for a gathering with friends and family.

Roast Ham and Emmental

You will need:

  • 2 slices of sliced, roast ham
  • 2 slices of emmental
  • 1 vine ripened tomato
  • A handful of shredded iceberg lettuce or rocket
  • Salt and black pepper
  • Butter or mayonnaise for spreading if desired

Halve your bagel and toast to your liking. First add a layer of shredded lettuce or rocket onto the base (you may wish to use a thin layer of butter or mayonnaise on the base beforehand). Onto this, add a layer of ham followed by a slice of emmental and repeat twice. Finally, top the second layer of emmental with sliced vine ripened tomato and season to taste with salt and black pepper.

This one is simple and simply delicious. Fresh and filling, this recipe brings together the well-known partnership of ‘ham & cheese’ – but elevates it to something quite different. Keep it simple with the recipe here, or add extra toppings to really tempt your taste-buds. Add chutney for a Ploughman’s bagel or tomato relish to bring in a tangy twist. Whatever you fancy, this can be your new go-to, hunger pang fix!
